Heat a large pan of water TIP.Heat the water in a kettle first then heat it Add the potatoes and cook for 8mins until just soft.

Add the peas in the pan just before the end of cooking time then Drain and set aside

In a frying pan, heat the oil and then fry the onion until soft and a little golden.

Add the curry paste and mustard seeds and fry for a few more minutes until fragrant

Carefully stir in the potatoes and peas, trying not to mash the potatoes.

Mix well then add the lemon juice and coriander and leave it to cool for 10-15 mins

Heat the oven to 200C/ fan 180C.

Unroll the pastry.

And roll out the dough on a floured surface 20cm by 20cm.

Then cut them into 4 squares.

Add the filling on to the pastry and close into packets.

Add egg wash on to the pastry and Heat in the oven for 20 mins until puffed and golden.
