Drain the firm tofu, wrap in kitchen paper towels and place on a plate lined with disposable chopsticks as shown in the photo.

Put the julienned carrot in a plastic bag, microwave for 1 and a half minutes, and empty out into a sieve.

Lightly wipe off any dirty from the shiitake mushrooms, sprinkle with a little sake (not listed in the ingredients)and cover with plastic wrap.
