Crockpot Salsa Chicken

   Spray your crockpot with pan spray or use a liner. Add your favorite topping and you are done!

   Place the chicken breasts in the crockpot and combine all the other ingredients on top of the chicken.

   Set the crockpot on low heat for 6-8 hours or high for for 4-5 hours.

   When you have 30 minutes left for the ingredients in the crockpot, prepare your rice or quinoa according to the package instructions.

   Fill a bowl with 1/2 cup of rice or quinoa and top with the crock pot salsa chicken.

   Add your favorite topping (optional) and you are done! I added shredded cheddar cheese, plain greek yogurt and diced avocado with some cracked black pepper. Optional toppings: Plain Greek yogurt or sour cream, Shredded cheese, Diced Avocado or Tortilla chips. You can add red pepper flakes to make it spicier too.
