THE NIGHT BEFORE:

Preheat oven to 400 F and lay the ribs (uncut) in a shallow baking pan.

Season with the salt, pepper and cayenne.

Brown about 15 minutes, then turn the ribs over and brown the other side for another 15 mins.

Drain the fat off and cut into pairs.

THE DAY OF:

In med bowl, mix together 1.5 bottles of BBQ sauce, ketchup and adjust with vinegar if too sweet. Also adjust now for the level of spiciness you prefer.

Save the other 1/2 bottle for coating the ribs after they've cooked in the crock pot.

Place ribs in crock pot and pour the blended BBQ sauce mix over the ribs.

Cook the ribs over low heat 6-8 hours or until ribs are tender.

RIGHT BEFORE SERVING:

Place ribs on clean baking pan lined with foil and coat with the remaining half bottle of BBQ sauce.

Broil the ribs under the broiler till carmelized. (Keep an eye on them and turn them over and carmelize the other side, too.)
