Pour the breadcrumbs and half the cheese into a plastic baggie.

Cut the artichoke hearts into quarters, add them to the plastic baggie and shake until well coated.

Place the artichokes on a sheet pan lined with parchment paper, sprinkle on another tablespoon of cheese and bake in a preheated 450 degrees F oven for 30 minutes.

As soon as the artichokes come out of the oven, transfer to a serving dish and sprinkle on the remaining tablespoon of cheese.

Serve warm.

To make the dipping sauce, combine the minced garlic, mayonnaise, buttermilk, lemon juice and dill in a bowl and season to taste.

Because this sauce is a little thick, its also great for vegetables but, if youd like it a little looser, add 1 tablespoon of low-fat milk or fat free half-and-half.

Note that you can substitute chives or scallions for the dill if you prefer.
