Preparing the pizza dough: Combine bread (strong) flour, cake flour, sugar, salt and dry yeast in a thick plastic bag.

Shake well to mix ingredients evenly.

Then add the lukewarm water and olive oil and knead in the bag for about 10 minutes.

You can do this while you are watching TV.

Knead until the mixture forms a dough and does not stick to the bag.

It should look like what is shown in this picture.

Keep some air inside the bag but seal it tightly.

Allow to rise for 30 minutes to an hour in a warm place.

Quick way to let the dough rise: Pour 40C water into a frying pan or saucepan.

Rest the bag of dough on top of the water.

When the dough expands to a little over twice its original size like in this picture, take it out from the bag.

Place on a floured surface and punch the dough to release the gases.

Divide the dough into 2 portions and form into smooth balls.

They'll round up nicely if you fold the edges of the dough into the center.

Place them on your work surface, with some space in between, and cover lightly with plastic wrap.

Let them rise again for 15 minutes in a warm place until they double in size once again.

Dust the top of your work surface and roll the dough to about 30cm in diameter.

Heat the frying pan and cook the flattened dough over medium heat until it turns golden brown on both sides.

This step makes the pizza pie crispy.

Place the cooked pizza pies on a wire rack to cool down.

Store them in the freezer.

Tightly wrap with plastic wrap and put in the freezer.

When you are ready to enjoy some pizza, you can take it straight out of the freezer and sprinkle on some toppings before baking in the oven.

There's no need to defrost.

Spread on your favorite sauces then add some ingredients and cheese on top.

Bake in an oven heated to 250 C for about 15 minutes Please adjust temperature and baking times according to your oven.
