   Cut the figs into small pieces.

   In a bowl, mix the flours and butter, work it all with your fingertips to obtain a grainy paste.

   Add the goat cheese, figs, egg yolk, and water. Knead to a smooth dough.

   Wrap your ball of dough in stretched plastic wrap, and refrigerate for 30 minutes.

   Preheat oven to 190 degrees Celsius.

   On a floured surface, roll out dough to 5 millimeters thick, and cut out shapes.

   Bake on a parchment paper or Silpat for 10 minutes.
