Ingredients: 1 (16 ounce.) pkg. sm. navy beans; 2 pound smoked ham hock or possibly meaty ham bone; 1 quart. boiling water; 1/4 bay leaf; 1 tbsp. chopped parsley; 1/8 teaspoon thyme; Pepper to taste; 3/4 c. all purpose flour; 3/4 c. chopped onion; 1 clove garlic, chopped; 1/4 c. melted butter; 1 teaspoon salt; 1 (28 ounce.) can tomatoes; 3 c. lowfat milk

2 pound smoked ham hock or possibly meaty ham bone
1 quart. boiling water
1/4 bay leaf
1 tbsp. chopped parsley
1/8 teaspoon thyme
Pepper to taste
3/4 c. all purpose flour
3/4 c. chopped onion
1 clove garlic, chopped
1/4 c. melted butter
1 teaspoon salt
1 (28 ounce.) can tomatoes
3 c. lowfat milk

Sort beans and wash thoroughly; soak according to package directions.

Drain.

Combine beans, ham hock, boiling water, bay leaf, parsley, thyme and pepper in a large sauce pan or possibly Dutch oven; bring to a boil.

Reduce heat; cover and simmer for 2 1/2 hrs or possibly till beans are well done.

Remove from heat.

Cut meat from ham hock; chop, and add in to beans.

Put flour in an 8 x 8 inch pan, under broiler.

Broil till proportionately browned, stirring frequently; set aside.

Saute/fry' onion and garlic in butter; blend in salt and flour.

Drain tomatoes, reserving juice.

Gradually add in tomato juice to flour mix; cook, stirring constantly, till smooth and thick.

Add in sauce and tomatoes to beans, mixing well.

If too thick, more water may be added.

Cover and simmer for 1 hour.

Stir in lowfat milk; heat thoroughly.
