Cream Of Onion Soup – a delicious recipe with butter, onions, celery, chicken stock, mace, bay leaf. Easy to follow and perfect for any occasion.

Servings: persons

1/4 c. butter
3 c. onions, finely chopped
2 ribs celery, finely chopped
3 3/4 c. chicken stock
1/8 tsp. mace or nutmeg
1 bay leaf
salt and pepper to taste
1/4 c. flour
2/3 c. milk
2/3 c. heavy cream

Saute first 3 ingredients until tender.

Add chicken stock, mace or nutmeg, bay leaf, salt and pepper.

Simmer for 45 minutes. Put soup mixture into blender for a smoother soup.

Return to pan. In a small jar with a lid, place flour and milk.

Shake until mixed.

Pour into soup mixture, stirring until soup is thickened slightly.

Slowly add heavy cream.

Heat through and serve with croutons floated on top.
