Cream Of Asparagus Soup

   Melt butter in sauce pan.

   Add in chopped onion and garlic.

   Saute, but do not caramelize.

   Add in chopped asparagus and vegetable stock.

   Bring to boil.

   Remove from heat and let cool slightly. Pour into blender or food processor and puree. Add in cream cheese, continue to puree.

   Soup should be slightly watery, pour back into sauce pan and simmer over low boil. Add salt, pepper, curry powder to taste. When soup is slightly thickened - or you can't hold out any longer - serve in a bowl.
