In a bowl sift together all dry ingredients.

Mix and set aside

Cream sugar and butter together until light fluffy about 2 mins

Add the egg, beat and combine.

On low speed gradually add the flour mixture to the butter mixture and continue beating until forms a dough

Line baking trays with parchment paper and scoop spoonfuls of dough on there

Place in the oven and bake for about 10-12 mins

When baked, leave to cool completely

Get your filling and add in 1 tsp depending on cookie size

Sandwich together the cookies
