Preheat oven to 375u00b0F. For the dough, sift flour and powdered sugar into a large bowl. Rub in butter to make fine crumbs. Add 3 1/2 tbsp ice water. Mix with a round-bladed knife, until mixture comes together, adding a little more ice water, if necessary.

Turn dough out onto a sheet of parchment paper and shape into a ball. Divide in half. Roll 1 portion out between 2 sheets of parchment paper to a 12 inch diameter round. Ease into an 8 inch diameter pie dish and trim edges. Roll remaining dough out between 2 sheets of parchment paper to a 12 inch diameter round. Place on a baking sheet. Chill, with prepared pie dish, for 30 mins.

Meanwhile, for the filling, place pears, cranberries, sugar and cornstarch in a medium bowl and toss to combine.

Spoon filling into pie dish. Using a small heart-shaped cookier cutter, cut hearts from center of second pastry round and place over filling. Press edges with a fork to seal and trim excess. Brush top with egg, sprinkle with extra sugar and bake 1 hour, or until golden brown. Remove from oven. Cool 5 mins then serve.
