Preheat Broiler.

Melt Butter in large skillet and saute' onion over medium heat, until softened and golden, about 5 minutes. Remove onions with slotted spoon and stir flour into remaining butter.

Saute' the butter and flour until well combined and bubbly (if too dry add additional butter) stir in Sherry, mix well then add Half and half and cook and stir until mixture is the consistency of heavy cream, thinning with additional milk if needed.

Add onions, crab meat, and 1 cup swiss cheese to pan and mix well. Remove from heat as soon as cheese melts into mixture.

Halve the English muffins, set on foil lined (for easy clean-up) baking sheet and top each muffin half with crab meat mixture, dividing crab evenly amongst the muffin halves.

Mix remaining Swiss and Cheddar cheeses and top the servings. Broil until cheeses are melted, bubbly and slightly browned on top.

Serve hot with fresh fruit garnish.
