Cornmeal Muffins

   Combine first 3 ingredients in a medium bowl, mixing well. Combine egg and buttermilk, mixing well. Add to dry ingredients, stirring until batter is smooth.

   Place a well-greased cast-iron muffin pan in a 500u00b0 oven for 2 minutes or until very hot. Remove pan from oven; spoon batter into pan, filling 3/4 full.

   Bake at 500u00b0 for 9 to 10 minutes or until lightly browned.

   Yields 16 muffins.
