Place hen on a slotted grate that youve placed inside of a baking pan.

Pour water in the bottom of pan to prevent the drippings from burning.

Place the pan into the oven and bake the Cornish hen for 20 minutes.

Then turn the hen upside down and continue baking for another 20 minutes.

Continue to flip it every 20 minutes and keep baking it until the inside temperature taken in the thigh is 160 F. Depending on the size of the hen, this could take at minimum one to one and a half hours.

If you are serving two people, cut it in half through the breast part of the hen.
