In saucepan melt two sticks of butter, then add olive oil and fresh herbs. Heat, stirring frequently. (This step can be done the day before).

When it is time to prepare the turkey for roasting preheat the oven to 450 degrees and then microwave the butter/oil/herb mixture then strain into glass container.

With injector, inject the butter/oil/herb mixture into the breast, thighs and legs in multiple locations.

Place the turkey BREAST DOWN on a rack in the roasting pan. Baste with butter/oil/herb mixture. Place in the oven. Immediately reduce temperature to 325 degrees. After 5 minutes drape with foil.

Roast half of projected roasting then remove from oven, flip bird so that it is breast up. Baste again and return to the oven with a thermometer set to alarm at 160 degrees. At this point remove the foil tent.

Continue roasting until internal temperature reaches 165 degrees, remove from oven and let rest uncovered for 20-30 minutes before carving.
