Clotted Cream Fudge

   Add all the ingredients except for the vanilla oil into a small pot, and simmer over low heat while mixing.

   Test the mixture by dropping it into cold water, if it doesn't get dissolved in the water, it's a soft caramel.

   If you can roll it into a ball between your fingers it's a fudge.

   Add the vanilla oil, and mix.

   Transfer the mixture onto parchment paper, optionally sprinkle with salt, and let it cool down.

   Let it chill for about 1 hour in the fridge and cut into smaller pieces.
