Sprinkle your countertop with about 1/4 cup sugar. Combine the remaining sugar with the cinnamon in a small bowl.

Lay the sheet of puff pastry on top of the sugared counter and sprinkle with about 2 tablespoons of the cinnamon-sugar mixture. Use a rolling pin to roll it out slightly. Then fold or roll both long sides of the dough toward the middle, creating a long log with two sides. Put the log onto a baking sheet and into the refrigerator. Let the log chill for 15 minutes.

Preheat oven to 400 F.

Cut dough into 24 slices (about 1/2 inch thick). Put some water into a bowl. Brush each side of the slices with water, then dip into the cinnamon-sugar mixture. Place the slices on an ungreased baking sheet, leaving plenty of room for spreading. (If desired, you may line the pan with parchment paper or a Silpat mat.)

Bake at 400 F for 10-12 minutes. Remove the pan from the oven and immediately move the cookies to a cooking rack and allow to cool.
