Put the cashews nuts in warm water and leave them for about 1 hour. Also preheat the oven.

In a big bowl mix together for about 2 mins the flour, cocoa powder, baking powder, baking soda, salt and soya protein.

In another bowl (or electric blender), batter together the avocados, honey, sugar, cinnamon and the egg. If you are using a blender add the cashew nuts so they are crushed with the whole mix. If you are doing the battering manually, break the nuts with your hands or carefully with the use of a knife. Mix until you can have a creamy smooth mixture.

Add the sugar mixture to the bowl from the second step and start battering all together until you see no flour or cocoa powder left overs. The whole mixture should have a dark brown colour once you have finished with it.

Simply put the mixture in the form of balls with a spoon or with your hands (press them a little bit to take the cookie form), into a non stick baking sheet and leave them in the over for 13 mins. Then take them out and let them rest for 4-5 minutes. If you chose to use the white chocolate, simply scratch with a knife and sprinkle it on the top of the cookies (as per picture) and leave them cookies in the over 2-3 mins more until the chocolate has melted.
