1. Melt chocolate, coffee (dissolved in 2T water) and A1/4C sugar. Stir constantly over low heat until chocolate has melted and sugar dissolved.

2. Beat until smooth. Cool slightly and add vanilla.

3. Beat in egg yolks 1 at a time, beating well after each addition.

4. Beat egg whites with a pinch of cream of tartar until soft peaks form.

5. Add remaining 1/4 cup sugar 1T at a time. Beat well after each addition.

6. Beat egg whites until stiff peaks form.

7. Fold a small amount of the egg whites into the chocolate mixture. Stir. This lightens the chocolate mixture and makes the next step easier.

8. Fold egg whites into chocolate mixture, gently, until combined. Do not stir nor beat.

9. Pour/scoop into serving dish or dishes and chill.

Serve with whipped cream if desired. Cover with plastic wrap.
