1. Preheat your oven to 400 F. Line a 12-count standard size muffin tin with liners. In a large bowl combine your flour, baking powder, baking soda and cinnamon. Mix well and set aside.

2. In another larger bowl combine your oil, sugar, egg, applesauce, vanilla, honey and milk. Beat your wet ingredients together until combined.

3. Add your dry ingredients slowly to your wet, and mix until the batter is nice and thick. Fold in your zucchini and chocolate chips.

4. Take a medium sized ice cream scoop and scoop the batter into each muffin liner filling to the top. Sprinkle the remaining tbsp of sugar evenly on the tops of the muffins and bake for 20-25 minutes or until a toothpick is inserted in the center and comes out clean.
