Chocolate Caramel Muffins (Surprise)

   Preheat the oven to moderate, about 180c.

   Lightly grease a 12 hole muffin pan.

   Sift flour into a large bowl, and stir pecans and chocolate.

   In a jug/bowl, whisk the milk butter and egg together.

   Make a centre in the flour mixture add the milk mixture all at once, and mix lightly until combined ~ and please dont overmix!

   Spoon enough mixture into each of the muffin holes ~ only to half fill and.

   top each with a half caramel and cover evenly with the remaining muffin mixture.

   Bake for 20 - 25 minutes or until a skewer comes out clean and dry when inserted into centre of muffin.

   Transfer to wire rack and cool.
