1 whole Yellow Bell Pepper, Stem And Seeds Removed Then Diced
1/2 bunches Cilantro, Chopped
1-1/2 cup Greek Yogurt Or Sour Cream, For Garnish
2 cups Monterey Jack Cheese, Shredded
