Preheat oven to 300u00b0F. Line a large rimmed baking sheet with parchment paper. Place sesame seeds and peanuts on prepared sheet and bake 10 minutes or until golden brown. Set aside to cool.

Attach multipurpose blade to KitchenAid(R) 7-cup food processor. Add toasted sesame seeds and peanuts, process on low speed until chopped.

Line the bottom and sides of a 9x9-inch baking pan with parchment paper. Lightly spray with cooking spray. Combine sugar, water and maltose syrup in a heavy pot. Heat over medium heat to 266u00b0F or hard ball stage on a candy thermometer. Quickly stir in chopped sesame seeds and peanuts and pour into prepared pan. Cool until set.

When cool, remove from pan and cut into bars. Cool completely and store in an air-tight container.
