Preheat the oven to 350u00b0F.

Melt the butter in a large stainless steel frying pan or casserole over medium heat.

Add the bacon and cook until golden, then remove.

Add the chicken pieces and cook until browned, approximately 4-5 minutes, then remove.

Add the onions and cook for 2-3 minutes, or until brown, then remove.

Mix flour into the remaining grease on the bottom of the pan, remove from heat.

Slowly pour in the red wine, whisking constantly.

Return to heat, bring to a boil and return the bacon and chicken to the dish.

Cover and bake for 1 hour.

Return onions to the dish and add the mushrooms. Cook for an additional 30 minutes.

Season to taste with salt and freshly ground pepper.
