1/4 teaspoon pepper
1/2 c. butter
2 tbsp. sherry, optional
1/2 pound mushrooms, sliced
2 tbsp. flour
1 1/2 c. chicken broth
1 tbsp. tomato paste
1 bay leaf, crushed
2 tbsp. minced fresh chives or possibly 1 teaspoon dry

Sprinkle the chicken breasts with 1 tsp.

Heat the butter till it begins to foam.

Add in chicken breasts and saute/fry till golden brown.

Spoon sherry over chicken.

Remove from skillet and place in shallow baking dish, cover with foil, and bake in 350 degree oven for 25-30 min, till tender.

Add in mushrooms to skillet and saute/fry till tender.

Blend the flour into the butter in skillet; add in the chicken broth and simmer, stirring constantly, till thickened.

Season with tomato paste, bay leaf, chives, and 1/2 tsp.
