1 pound chicken
1 egg white
1 tbsp. sherry
1 tbsp. cornstarch
1/2 teaspoon salt
1 1/2 tbsp. chopped ginger
1 1/2 tbsp. chopped green onion
1 tbsp. chopped garlic
1/4 teaspoon red pepper flakes
6 tbsp. hoisin
4 teaspoon soy sauce
1 tbsp. sherry
1 each green, red, yellow pepper
1/2 c. cashews

Cut chicken into 3/4 inch cubes.

Marinate in egg white, sherry, cornstarch and salt for 4-24 hrs.

Mix the ginger, green onion, garlic and pepper flakes together and put aside.

Mix the hoisin, soy sauce and sherry together and put aside.

Cut the peppers into cubes.

Stir fry the peppers.

Remove from wok.

Stir fry the chicken till done.

Stir fry the ginger mix for 30 seconds, add in the hoisin mix.
