Chicken With Coppa And Rosemary

   Preheat oven to 210 degrees Celsius.

   With a small knife, make flesh-deep slits in the skin of the chicken.

   Slide a slice of coppa inside the slits, under the skin.

   Brush the chicken pieces with mustard, place them in a baking pan covered with parchment paper (for easy cleaning).

   Place a sprig of rosemary on each piece of chicken.

   Spray with olive oil (about 2 tablespoons) and lemon juice.

   Sprinkle with coarse salt and pepper.

   Bake for 50 minutes, then reduce temperature to 180 degrees for 15 minutes.
