1 ½ cups chicken stock, heated
1 tablespoon cornstarch
3 tablespoons cold water
2 tablespoons heavy cream
1 teaspoon fresh parsley
salt, to taste
black pepper, to taste

heat butter in saute pan over medium heat.

add chicken and season well with salt and black pepper.

cover and cook 5 minutes on each side over very low heat.

meanwhile, heat oil in frying pan.

season, cover and cook 5 minutes over medium heat.

add cognac and cook 2 minutes over high heat.

pour in chicken stock and correct seasoning if needed.

continue cooking 5 minutes over low heat.

dissolve cornstrach in cold water.
