Chicken Thighs W/ Olives & Feta

   Sprinkle chicken with salt and pepper. Heat oil in deep skillet. Saute Chicken and transfer to plate.

   Add onion to drippings; cook about 3 minutes until soft. Add garlic and cook 1 minute. Add tomatoes, olives, wine and oregano. Return chicken and juices, cover and simmer until chicken is tender (about 25 minutes). Remove lid last 5 minutes.

   Serve over orzo and sprinkle with feta and parsley.
