1 tsp. cornstarch
1 tsp. garlic, chopped fine
2 green onions, chopped
1/2 tsp. salt
1 lb. skinless chicken, cut in small pieces
1 head broccoli
2 to 5 tsp. vegetable oil
1 sweet red or green pepper, sliced in strips
1/2 c. chicken broth
1 tsp. soy sauce
4 c. hot cooked rice

Combine cornstarch, garlic, onions and salt.

Add chicken and toss to coat the chicken.

Prepare broccoli (steam) and drain in a large skillet.

Add 1/2 the oil to chicken mixture.

Stir-fry until chicken loses its color, about 2 minutes on high heat.

Add oil and pepper.

Stir-fry 1 minute.

Add broccoli.

Add chicken broth.
