Ingredients: 1 barbecued chicken, meat shredded into bite sized pieces; 750 g potatoes, peeled and sliced; 6 spring onions, chopped; 30 g butter, extra; 1 garlic clove, crushed; 2 tablespoons plain flour; ⅓ cup water; 1 chicken stock cube; ⅓ cup dry white wine; ½ cup cream; 2 teaspoons French mustard; 1 tablespoon mayonnaise; 1 cup grated tasty cheese; paprika; 2 tablespoons fresh parsley, chopped

750 g potatoes, peeled and sliced
6 spring onions, chopped
30 g butter, extra
1 garlic clove, crushed
2 tablespoons plain flour
⅓ cup water
1 chicken stock cube
⅓ cup dry white wine
½ cup cream
2 teaspoons French mustard
1 tablespoon mayonnaise
1 cup grated tasty cheese
paprika
2 tablespoons fresh parsley, chopped

Preheat oven to 190C

Cook potatoes in boiling water until almost done, drain well.

Layer potatoes in a greased casserole dish.

Top with chicken and spring onions.

Melt butter in a medium saucepan.

Briefly saute the garlic.

Stir in flour, water, crumbled stock cube, wine and cream and cook, whisking until thickened slightly.

Stir in mustard and mayonnaise, pour over chicken.
