Chicken Fajita Taquito Rolls

   Preheat oven to 425 F.

   Heat olive oil in a skillet over medium high heat then add peppers and onion and cook until onion is clear.

   Remove skillet from heat.

   Cover a large baking sheet with aluminum foil and spray the foil lightly with cooking spray.

   In a large bowl mix together chicken, fajita seasoning, peppers and onion mixture and cheese.

   Mix well.

   Lay your tortillas out on a work surface.

   Spoon 2-3 tablespoons of the chicken mixture into a flour tortilla and roll it up.

   Place the Taquito Roll Roll seam-side down on the baking sheet.

    Repeat the filling and rolling process until you are out of tortillas.

    Once finished, spray the tops of the taquitos with non-stick cooking spray or brush with olive oil.

    Place pan in oven and bake for 15-20 minutes, or until edges and tops are golden.

    Then remove the pan from the oven and let the taquitos cool for a couple of minutes.

    Serve with your favorite toppings.
