Ingredients: 1 large chicken, boiled; 2 qt. corn bread crumbs; 3 c. cooked rice; 6 to 8 hard-boiled eggs; 1/2 c. chopped onion; 1/2 c. chopped green onion; 1/2 c. chopped bell pepper; 1/2 c. chopped celery; 1 c. margarine; salt and pepper to taste

1 large chicken, boiled
2 qt. corn bread crumbs
3 c. cooked rice
6 to 8 hard-boiled eggs
1/2 c. chopped onion
1/2 c. chopped green onion
1/2 c. chopped bell pepper
1/2 c. chopped celery
1 c. margarine
salt and pepper to taste

Saute chopped pepper, onion and celery in margarine.

Debone chicken (save broth) in a large roaster.

Pour chicken broth over the cornbread and rice until moist.

Let set for a few minutes so the cornbread can soak up the broth.

Add margarine.

Add deboned chicken, chopped eggs, sauteed vegetables and green onions.
