2 None wholewheat bread rolls, halved
4 None lettuce leaves
100 g cucumber, sliced

Place the diced tomatoes in a small saucepan with the horseradish, mustard and sugar. Simmer over medium-low heat until slightly thickened, stirring occasionally. Season to taste with the pepper sauce, salt and pepper. Set aside to cool.

Sprinkle the chicken with salt, pepper and the rosemary. Heat the butter in a large nonstick skillet over medium-high heat, add the chicken and cook for 5 mins per side until golden brown and cooked through.

Spread the bottom halves of the rolls with the ketchup. Layer the chicken, lettuce, tomato slices and a few cucumber slices on top and sandwich with the top halves of the rolls.

Arrange the remaining cucumber on two plates, top with the burgers, garnish with the parsley and serve.
