4 boneless chicken breasts
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. olive or salad oil
2 Tbsp. butter or margarine
3 Tbsp. green onion or chives
juice of 1 lemon
3 Tbsp. chopped fresh parsley or 1 Tbsp. dry flakes
2 Tbsp. Dijon mustard
1/4 c. chicken broth

Pound chicken between waxed paper.

Sprinkle with salt and pepper.

Melt butter, mix with olive oil in micro safe dish.

Add chicken.

Coat both sides.

Microwave 3 minutes on High.

Turn chicken and microwave 3 more minutes on High or until chicken is tender.

Mix chives, onions, lemon juice, mustard and parsley.
