Ingredients: 3/4 lb. boneless chicken; 3/4 lb. hot sausage; 2 Tbsp. oil; 1/2 large onion, chopped; 1/2 bell pepper, chopped; 2 stalks celery, minced; 1 clove garlic, minced; 1 lb. can tomatoes; 1 c. rice; 2 c. liquid (this includes tomato liquid as well as chicken broth); 1 c. smoked ham, chopped; 2 green onions, chopped; 1/8 c. parsley, chopped; 1/4 tsp. cayenne pepper; salt and pepper to taste

3/4 lb. boneless chicken
3/4 lb. hot sausage
2 Tbsp. oil
1/2 large onion, chopped
1/2 bell pepper, chopped

Brown chicken in oil.

Remove chicken and saute onion, bell pepper, celery and garlic in grease.

Cover and simmer for about 20 to 30 minutes.
