chicken and garlic jacket potato

   preheat oven to 200 degrees

   wash potatoes and pat dry with paper towel

   pierce potatoes all over one side

   wrap each potato in foil, pierced side up

   place straight on oven rack on middle shelf.

   cook for 90 mins or until wooden skewer slips straight in and out without grip when inserted into the potato

   cut potato in half and in half again, careful not cut completely through.

   just enough so that potato opens but does not fall apart (if presentation is important)

   evenly spread garlic butter over hot potato.

    then sprinkle with desired amount of cheese.

    top with some chicken and place in microwave for 40 seconds

    top desired amount of sourcream on potato and finish off with thinly sliced shallots.

    I like to cut with scissors over the potato.
