Preheat the oven to 325u00b0F. Line a 12 hole cupcake pan with paper liners. Beat the butter, sugar, salt and vanilla extract until creamy. Beat in the eggs one at a time, beating well between each addition. Fold in the flour and baking soda, then stir in 5 tbsp of the milk.

Divide 2/3 of the cake mixture among the cupcake molds. Mix the remaining milk with the cocoa powder and stir in the remaining cake mixture. Spoon over the top of the vanilla batter.

Lightly press the cherries into the top of the chocolate batter. Bake for 20-25 mins. Allow to cool in the pan for 10 mins, then remove and place on a wire rack to cool completely.

Beat the cream cheese, powdered sugar and lemon juice until smooth. Spoon the frosting into a piping bag fitted with a star-shaped nozzle and pipe onto each cupcake using a spiralling motion. Chill for 30 mins.

Melt the chocolate and coconut oil in a bowl set over a pan of simmering water. Allow to cool slightly, then spoon over the frosting.
