Marinate the chicken:

Combine the olive oil, soy sauce, and steak seasoning in a small bowl.

Pound chicken breasts (should be about 4 breasts) between two sheets of waxed paper.

Place chicken in a Ziploc freezer bag, pour in the marinade, and seal.

Marinate the chicken in the fridge for at least 30 minutes.

Meanwhile, cut the bacon slab in half and start frying it until its nice and crispy and golden-brown.

While the bacons frying, make the honey mustard.

Combine the mayo, honey, lemon juice and mustard in a small bowl or measuring cup and set aside.

Heat up the indoor grill (or use the bacon pan with a tablespoon of the bacon grease if you dont have one).

Cook the chicken on the grill for about 6 minutes or so (if using the frying pan, thats about 6 minutes on each side).

When chicken is cooked through, plate it, brush it with the honey mustard, top with bacon slices (enough to cover the breast), and then top with 2 cheese slices.

Cover with foil or stick in the microwave for a few minutes so the cheese can melt.

Serve with extra honey mustard on the side and enjoy!

Note: If youd like to add mushrooms (as with traditional Alice Springs chicken), they would be placed on top of the chicken underneath the bacon and cheese layers.
