3 Tablespoons Olive Oil, Divided
1 whole Small Sweet Onion, Diced
2 teaspoons Minced Garlic
1 can Rotel Brand (Lime Juice And Cilantro) Diced Tomatoes And Green Chilies, Undrained, 10 Ounce Can
1 whole Large Tomato, Diced
1 Tablespoon Cumin
1 teaspoon Chili Powder
1/2 teaspoons Cayenne Pepper
6 cups Low Sodium Chicken Broth
2 whole Carrots, Sliced Into Small Pieces
1 can (15 Oz. Size) Corn, Drained
1 can (15 Oz. Size) Black Beans, Drained And Rinsed
1/2 teaspoons Salt, Or To Taste
1/2 teaspoons Black Pepper, Or To Taste
2 cups Shredded Monterey Jack Cheese (or Any Mexican Blend Cheese)
1-1/2 cup Cilantro, Chopped
1 whole Avocado, Peeled, Pitted, And Cut Into Chunks
1 bag Corn Tortilla Chips, Crushed, For Optional Garnish
1 whole Limed, Quartered

In a large frying pan over medium high heat, fry chicken in 1 tablespoon of olive oil. Add a dash of salt and pepper and cook until the slices are all lightly browned. Set aside.

In a large stock pot, heat 2 tablespoons of olive oil over high heat. Add onions and garlic, and saute for aproximately 3 minutes.

Stir in Rotel canned tomatoes (undrained), fresh tomato and spices, then bring to a boil.

Add the broth, carrots, corn, black beans, cooked chicken and salt and pepper. Return to a boil, then reduce heat to medium and cook another 10-12 minutes.

Ladle soup into bowls and top with cheese, cilantro, crushed tortilla chips, avocado chunks and lime juice to taste.

* You can also use a prepared rotisserie chicken in place of the chicken breasts. If you do this, just add it towards the end of the cooking time.
