Add butter to a hot med sized pot over med heat and melt add poultry seasoning, pepper, paprika and garlic and simmer for 1 min

Add all the flour and whisk until well combined

Immediately add cream and stock and whisk thoroughly. Continue whisking making sure you are scraping the bottom of the pot on all sides. The sauce will start to thicken fairly quickly and will burn fast if you allow it to sit too long

Once you start feeling the thickness add cheese 1 cup at a time and stir until melted and mixed in. If the sauce starts getting to thick which it most likely will just add some stock to help loosen it up. You will probably have to do this every time you add cheese

Once all the cheese is added and you have loosened the sauce to your desired consistency you now get to add the salt.

Add some salt, stir it good and have a taste and continue doing so until you've reached your perfect amount of salt. If you're unsure start with smaller amounts, you can't go backwards
