Ingredients: 2 (1/4 ounce) envelopes unflavored gelatin; ½ cup cold water; 1 cup sugar; ¼ teaspoon salt; 2 eggs; 1 (6 ounce) can frozen concentrated orange juice; 1 teaspoon orange zest; 3 cups cottage cheese; 1 cup heavy cream; 2 tablespoons butter; ½ cup graham cracker crumbs; 10 candied cherries; ½ cup mandarin orange

2 (1/4 ounce) envelopes unflavored gelatin
½ cup cold water

soften 2 envelopes knox gelatin in water

mix 3/4 cup sugar and salt in double boiler

stirring consantly until slightly thickened about 10 minutes

remove from heat add softened know and finely grated orange zest

stir in sieved cottage cheese ( i think you can use food processer here).

chill stirring occasionally until mixture mounds slightly when dropped from a spoon

beat egg whites until stiff

gradually beat in 1/4 cup sugar.

beat heavy cream until whipped

fold in whipped cream to orange mixture

then fold in beaten egg whites.

turn into 8 inch spring form pan

combine melted butter and graham crackers

sprinkle over middle of top of cake

put one canned orange slice at bottom then a marachino cherry then orange slice all round bottom

on top fan 3 sets of three orange slices around top with 1 marachino cherry at top of each 3 slices.
