Carrot And Walnut Cake

   Preheat oven to 180 degrees Celsius.

   Grease a baking tray with margarine and flour. Set aside.

   Begin by grating the carrots. Set aside.

   Weigh the walnuts, coarsely break in pieces, and set aside with carrots.

   In a bowl, beat the eggs and sugar until you get a fluffy yellow dough. Stirring constantly, add the oil, and mix until all is well combined.

   Then add the flour, baking powder, and cinnamon. Beat until obtaining a homogeneous mixture.

   Add the nuts and carrots, and mix well.

   Place the dough in baking tray, and bake for 40 to 45 minutes.

   Stick a toothpick in the center of the cake, when it comes out clean, the cake is done.

    Remove from oven, and chill on a rack.

    When cold, cut into squares, and sprinkle with powdered sugar.
