Mix dry ingredients in bowl

Cut in butter until mixture resembles coarse meal

Combine milk, 1 whole egg and 1 egg yolk in small bowl (save egg white)

Mix both bowls together until moistened

Turnout on lightly floured board and knead several times

Form into ball and divide in half

Pat each half into 6-8in circles

Cut each circle in 6-8 wedges

Beat remaining egg white and brush tops of scones

Sprinkle generously with extra sugar

Bake in preheated oven at 400 degrees for 18-20 min until golden and springy to the touch

Orange Raisin - mix grated orange peel and 1cup raisins. Replace 1/3cup of milk with OJ

Almond Scones - add 1cup sliced almonds and 1tsp almond extract
