Caribbean Jerk BBQ Pork Sandwich

   Place in full hotel pan (or half hotel pan for trial recipe); cover with foil.

   Bake in 275F-standard oven for 3 hours (or in 250F-convection oven for 1-1/2 hours) or until pork is cooked through (160F).

   Remove from pan; cool slightly.

   Meanwhile, combine barbecue sauce, remaining 1 Tbsp.

   jerk seasoning (or remaining 1/2 Tbsp.

   jerk seasoning for trial recipe) and the cinnamon in large saucepan.

    Shred the pork.

    Add to ingredients in saucepan; mix well.

    Cook on medium-low heat until heated through, stirring occasionally.
