1.Peel, core, and slice apples (Cortland, Gala, or Fuji) in quarters; set aside.

2.Take the sheet of puff pastry out of the freezer and bring to room temperature.

3.Put a 10-12 inch cast-iron or other ovenproof pan on the stovetop. Add butter and coat bottom and sides of pan. Add the 3/4 cup sugar. Stir until sugar melts into butter and turns an amber color.

4.Add apple slices in a concentric circle, starting with outside of pan; squeeze in as many apples as you can for a tight fit. Turn heat to medium-high, and cook for 20 minutes.

5.Remove from heat and place puff pastry over apples, folding the edges back over the pastry sheet. Bake in the oven for 20 minutes or until golden brown.

6.When cool, invert pan onto platter, and serve with vanilla ice cream or whipped cream.
