1
In a small bowl whisk flour and salt. Add in milk, egg and oil and mix until smooth. Let mixture rest for 10-20 minutes.
2
Lightly oil a small non-stick skillet and heat on medium-low.
3
Pour in 3 Tablespoons of the batter and swirl around the pan until you get a very thin layer of batter across the bottom surface of the pan.
4
Cook for about 2 minutes or until crisp around the edges and golden brown.
5
Flip and cook the remaining side until golden brown. Remove the crepe to a plate. Keep cooked crepes under a lightly damp paper towel.
6
Repeat with remaining batter.
7
Once crepes are done heat 1 Tablespoon of butter in the same pan over medium heat. Add in diced apples, cinnamon and sugar. Cook until apples are cooked through - about 3-5 minutes.
8
To prepare crepes add about 2 Tablespoons of the apple mixture to a crepe and fold up the crepe burrito style. Place on a plate, fold side down and drizzle caramel sauce over top. You can also top with more apples and powdered sugar.
