-
1
Preheat oven to 325-350.
-
2
I used a glass dish so I kept my oven at 325.
-
3
Depends on what you use to bake
-
4
Add oil to skillet to fry up potatoes.
-
5
You may season these.
-
6
I used salt, pepper, garlic powder.
-
7
Stir & cook until fork goes thru potatoes without much effort.
-
8
Now you can add onion & sausage patties, or preferred meat.
-
9
Or omit meat all together .
-
10
This is versatile.
-
11
Once sausage begins to brown, remove & cut up.
-
12
Then add back to skillet.
-
13
Once that has cooked a few minutes, the mushrooms can be added.
-
14
Once softened, you can turn off heat
-
15
The eggs need to be whisked together in a large bowl & add the dash of milk.
-
16
In a greased casserole dish, add the potatoes mixture from the skillet.
-
17
Using your spatula or large spoon & even it out.
-
18
You can sprinkle half the cheese at this time.
-
19
Next pour the eggs on top of the potato mixture.
-
20
The eggs will coat & run to the bottom of the dish.
-
21
Top with remaining cheese.
-
22
I used a Mexican blend, shredded plus some Monterey cheese cut up.
-
23
Any cheese is going to be delicious!
-
24
Bake uncovered 20-25 min.
-
25
My dish was not deep so if yours is, the time may need to be increased.
-
26
Insert a knife to check the eggs, as the other ingredients have already been cooked.
-
27
Once done, let cool & enjoy!
