1
Cook lasagna noodles according to package directions.
-
2
Do not rinse!
-
3
Just drain.. you need the stickyness of the starch to stay on the noodles to aid in rolling.
-
4
Preheat oven to 375F
-
5
Using a large baking sheet.. spread a thin layer of spagetti sauce over entire sheet.
-
6
Set aside.
-
7
Line work surface in wax paper or parchment paper.
-
8
Lay out each noodle onto paper in a single file.
-
9
Spread a couple tbl.
-
10
Of ricotta mix along each noodle as pictured.
-
11
Its ok if u dont cover the entire thing.
-
12
Lay out a few slices of tomato across the ricotta.
-
13
Leaving a small space between each and leaving a small space at each end.
-
14
To make for easy rolling.
-
15
Break apart small pieces of spinach and sprinkle accross tomatoes.
-
16
Sprinkle basil across the length of the noodle.
-
17
Just a light sprinkle.
-
18
Do the same with the parmesan.
-
19
Really as much as you would like.
-
20
Gently but firmly.. starting at one end, roll the lasagna noodle up.
-
21
Not to tight or it will all push out the sides.
-
22
Transfer roll to on top of prepared baking sheet.
-
23
Repeat until out of ingredients.
-
24
Now spoon sauce over each roll, as much as u would like.
-
25
But i did a big serving spoonful on each.
-
26
Now sprinkle motzarella cheeese on top of each.
-
27
About a small handful.
-
28
More if u like more, but itll get messy if u put to much sauce/cheese.
-
29
Again take the basil and parmesan and give another light sprinkle to the top of each roll..
-
30
Bake in oven for 10-15 min.
-
31
Closest to heat.
-
32
Just long enough to heat it up and let the cheese melt.
-
33
If the ricotta is starting to ooze out.. its done!
-
34
:)
-
35
Transfer to serving plates.
-
36
And serve!
-
37
I served mine with homemade garlic bread and a nice italian side salad.
-
38
Enjoy!
